The story of the trip

We will see salt born from the meeting of sea, sun and wind. We will enter the places where it is still produced today, meet those who keep the trade alive and discover that there is no single salt: it changes in shape, texture, taste and use.

We will find it again in the kitchen, in food preservation and in the economic history of coastal communities.

Three days to discover that behind a small white crystal lies an entire territory. The trip is organised as a private tour, with dedicated transfers by car or minivan with driver during the planned activities and services scheduled for the participants, depending on the chosen set-up.

The programme

+Day 1 · Trapani and Paceco | Where the sea becomes salt

Arrival in Trapani and check-in at the selected property.

Our journey begins by following the coast towards Paceco and Nubia, entering the landscape of the Trapani and Paceco Salt Pans Nature Reserve.

Before even talking about production, we will observe what is around us: pools of water, canals, windmills, white mountains and water birds.

We will thus understand that a salt pan is not simply the place where salt is collected, but a system built over the centuries by exploiting a delicate balance between sea water, evaporation, sun and wind.

The salt worker – The hands behind the landscape

Salt will begin to have a face.

Through a guided visit or a meeting with someone who knows this trade, we will follow the path of the water through the different pans to crystallisation.

We do not just want to photograph the salt pans. We want to understand how they work and why this landscape exists exactly as it does.

Depending on the season and the availability of the operators, the experience may be enriched by a hands-on moment tied to the salt worker’s trade and the tools traditionally used in the work.

Taking part in the actual harvest will instead be possible only in the period of the year when production conditions allow.

Salt comes to the table

The day will continue with lunch in the salt pan area, dedicated to local cuisine and the catch. This time salt will not necessarily be the visible protagonist of the dish. But we will discover how indispensable it was in transforming and preserving what came from the sea. In the afternoon we can continue exploring the nature of the area or spend time in Trapani and its historic centre.

Return by private vehicle. Dinner and overnight in the Trapani area.

+Day 2 · Marsala and Stagnone | Hands in the salt

Breakfast and departure by dedicated private vehicle for Marsala.

Following the coast we will enter the Stagnone lagoon, where the landscape changes again: shallow water, islands, windmills and salt pans make up one of the most recognisable scenes of western Sicily. We will reach the area of the Ettore e Infersa Salt Pans and their historic windmill.

From sea to crystal

We will follow the journey of sea water through the pans until salt is born. We will enter the world of windmills and understand how important the wind was not only for evaporation, but also for the working of the ancient production system.

This day, however, will not be made only of explanations.

We will also touch the salt, look at it closely and learn to recognise it.

The salt experience

Salt worker for a day – Hands in the salt

During the harvesting period we can get close to the work of the salt worker and, in the way set by the operator, enter the production areas dedicated to the experience.

Tasting salt – Not all crystals are the same

Outside the harvesting period, or as a complement to the visit, we can take part in a guided tasting. Whole sea salt, fleur de sel and different grain sizes will let us discover differences in texture, saltiness and use.

White meets gold – Marsala

In the afternoon we will change colour. From the white of salt we will move to the gold, amber and deeper tones of Marsala wine.

We will enter a winery to get to know another product that has deeply marked the city’s economic and commercial history, ending the visit with a tasting accompanied by small bites of the area.

In the late afternoon we will return to the Stagnone.

Sunset – When white changes colour

We will wait for sunset in front of the salt pans. The white that has accompanied us during the day will begin to turn pink, orange and gold, while windmills and islands slowly stand out in silhouette. Return by private vehicle. Dinner and overnight in the Marsala area.

+Day 3 · Marsala | From salt to cuisine

Breakfast.

On the last day we will leave the pans and follow salt to the place where we are all used to meeting it: the kitchen.

We will discover Marsala through its historic centre and the city’s relationship with the sea, before entering the kitchen to understand another fundamental function of salt.

Salt preserves – Before refrigerators

We will meet a chef, a traditional cook or a local producer to discover one of the uses that made salt indispensable for centuries: food preservation.

Salted fish, capers, olives and other traditional preparations may become concrete examples through which to understand that salt was not just used for flavour.

It was used to preserve.

Depending on the chosen formula, the experience will also include a small hands-on moment.

At the table – How much salt do you really need?

The trip will end at the table. During lunch we will find some of the products and flavours met over the three days and this time try to recognise their use and role.

Salt will no longer simply be what we find in a salt shaker.

It will be sea, sun, wind, work, preservation, cooking and landscape.

At the end, private transfer to Trapani, Marsala or another agreed destination and end of services.

Three days earlier we saw only white mountains. Now, behind each crystal, we will recognise a landscape and the hands of those who keep looking after it.
