Self-guided
Each itinerary offers a route of suggested, ordered stops, but it is up to the traveller to decide how many to follow and by what means: on foot, by car, by bike.
A project of GAL Pesca Trapanese
Five self-guided routes that tell the story of the twelve towns of the Trapani coast through the sea, salt and cuisine. Not an organised tour, but a guide: choose the theme that intrigues you, follow the suggested stops, linger wherever you like.
Each itinerary offers a route of suggested, ordered stops, but it is up to the traveller to decide how many to follow and by what means: on foot, by car, by bike.
Each itinerary is a way of reading the area — the catch, tuna, salt, traditional cuisine, couscous — and coherently organises the places, operators and experiences of the portal.
Each itinerary is linked to the partner operators and to the voucher scheme, turning a visit into direct support for the local economy.
The reasons behind a choice
Local typical produce — the catch, salt, tuna traps, traditional cuisine — is an engine of development for communities: it generates income, jobs, social cohesion and protection of the marine environment. For today’s traveller, gastronomy is now among the first factors in choosing a destination, right after climate, accommodation and landscape.
The Itinerari del Gusto were created to bring this heritage together, along with the quality mark Mare Nostro already awarded to 15 local restaurateurs, turning the table into an authentic experience of discovering the area.

Each itinerary is a different doorway into the same area: the sea, salt, tuna traps, cuisine and couscous tell the story of the places, communities and flavours of the Trapani coast.
Custonaci, Erice, Favignana, Marsala, Mazara del Vallo, Misiliscemi, Paceco, Pantelleria, Petrosino, San Vito Lo Capo, Trapani, Valderice
In 2020 UNESCO inscribed Maghreb couscous on the Representative List of the Intangible Cultural Heritage of Humanity. But on this coast couscous has an older and more intimate story: it arrived with the sailors and workers who, between Mazara del Vallo and San Vito Lo Capo, traded for centuries with the Tunisian coasts…
Marsala, Mazara del Vallo, Pantelleria, Petrosino
There is a thread that links two cities facing the same Strait of Sicily, united by centuries of history and a visceral relationship with the sea. In Mazara del Vallo everything begins at dawn, when the canal port comes alive with the return of the fishing boats — Italy’s most important fleet — from where one day in March 1998 even a bronze Dancing Satyr resurfaced…
Marsala, Paceco, Trapani
As early as the twelfth century the Arab geographer Al-Idrisi described these salt pans as a treasure of the Trapani coast. Since then, for almost a thousand years, wind, sun and the shallow sea have worked together with people to turn a strip of coast into a unique landscape: pans…
Custonaci, Favignana, San Vito Lo Capo, Trapani, Valderice
Every spring, for centuries, tuna crossed the Strait of Gibraltar to enter the Mediterranean to spawn, and the Trapani coast awaited them with a system of nets, rituals and whole communities built around a single event: the mattanza. In Favignana this relationship reached its…
Erice, Misiliscemi, Paceco, Trapani
There is a cuisine that does not appear in glossy guides: that of family homes, of trattorias that have kept the same name for three generations, of Sundays when grandmother made fish couscous in the ceramic mafaradda, the same one her mother used before her. This itinerary…

Find your way among the itineraries
The itineraries cross the towns of the Trapani coast along five themes: the catch, tuna, salt, traditional cuisine and couscous. The map helps you see where each route starts and how it relates to the area.
Each marker shows the starting point (“point zero”) of an itinerary, coloured by its category. Handy for finding your way between itineraries before choosing where to begin.
