The story of the trip
We will not start from the dish. We will start from the port.
We will meet those who live the sea, get to know boats, fishing and the catch, enter the kitchen and follow the Red Prawn all the way to the table.
Only afterwards will we move to Marsala, to understand how along the same coast sea, salt and wine gave rise to different economies and identities.
The programme
+Day 1 · Mazara | The two shores of the Mediterranean
Arrival and check-in.
With a guide we will get to know Mazara, starting from the port and continuing through the Kasbah.
The Mediterranean will immediately appear in its two dimensions: a sea for fishing and a road of encounters. We will visit the Museum of the Dancing Satyr.
The day will end with a dinner dedicated to seafood cuisine. Overnight in Mazara del Vallo.
+Day 2 · Mazara | The sea as work
Breakfast.
We will return to the port.
When possible we will meet a fisherman or someone tied to the Mazara fishing fleet.
We will talk about crews, departures, days spent far from the coast, boats, tools and fishing.
Place, person, gesture
When possible we will learn a knot, recognise a piece of equipment or understand how the product is handled on board.
Lunch will be dedicated to the local catch.
In the afternoon, a closer look at the memory of the fishing fleet.
+Day 3 · Mazara | The Red Prawn goes into the kitchen
Today we will meet the protagonist directly.
We will learn about the characteristics and ways of using the Red Prawn.
Then we will put on the apron.
Cooking class
The chef will teach us to handle a delicate raw ingredient, clean it and use it without masking its characteristics.
The menu may change according to availability and season.
We will eat what we have helped to prepare.
Overnight in Mazara.
+Day 4 · Marsala | The catch meets wine
Breakfast and private transfer to Marsala.
Visit to the city.
In the afternoon we will enter a historic winery and get to know Marsala wine.
Tasting and local products.
At the table we will look, when appropriate, for the meeting of catch and local wines.
Overnight in Marsala.
+Day 5 · Stagnone | Salt preserves the sea
The last day will be dedicated to the Stagnone salt pans.
We will discover how salt is born and why it was fundamental in preserving seafood.
Final lunch.
Five days earlier the Red Prawn was a prized product. Now, behind that colour, we will recognise a port, a boat, a crew, a fisherman, a kitchen and an entire Mediterranean.
