Prepared for the Christmas festivities, it is a small sweet doughnut whose main ingredients are flour and potatoes.

Of Arab origin, it should be eaten as soon as it is fried, still warm, sprinkled with plenty of sugar and cinnamon. The origin of the name is emblematic: in both Arabic and Latin it means sponge, just like the soft, irregular shape of this particular fritter.
