The story of the trip

We will see it born from the sea, get to know those who produce it and find it again in the catch, in the tuna traps, in preservation, in cooking and in the commercial history of the coast.

Salt will become the key to reading an entire part of western Sicily.

The programme

+Day 1 · Trapani | The city and the Mediterranean

Arrival, check-in and first encounter with Trapani.

We will stroll through the historic centre to the sea and the port.

A dinner dedicated to seafood cuisine will introduce the thread of the journey: what would cooking from the sea be without salt?

Overnight in Trapani.

+Day 2 · Paceco and Nubia | Where salt is born

Breakfast and departure for the salt pans.

We will get to know pans, canals, windmills and the work of the salt worker. We will follow the path of sea water to crystallisation and discover the delicate balance that makes this landscape possible. Lunch in the salt pan area. Overnight in the Trapani area.

+Day 3 · Custonaci and Bonagia | Salt preserves

Breakfast and departure along the coast.

The Custonaci area will also let us meet extra virgin olive oil and the farming world. We will then go down to Bonagia. Tuna trap, tonnaroti, rais and the processing of the catch will show us why salt has for centuries been much more than a seasoning.

Food experience dedicated to fish and its processing.

+Day 4 · San Vito Lo Capo | Salt inside the couscous

We will reach San Vito Lo Capo.

The protagonist of the day will be fish couscous. Through the dish we will understand how salt, broth and catch enter a preparation that tells of the Mediterranean and the meeting of cultures. Lunch dedicated to couscous. In the afternoon, Macari and the coast.

+Day 5 · Marsala and Stagnone | From sea to crystal

Departure for Marsala and the Stagnone.

Visit to a salt pan and the windmill. Depending on the season: a harvesting experience or a tasting of the different salts.

Sunset over the salt pans. Overnight in Marsala.

+Day 6 · Marsala | From the salt pan to the pantry

Hands-on experience dedicated to the role of salt in preservation.

Capers, olives, fish and other products may become our workshop.

In the afternoon, a visit to a historic winery with tasting.

From salt to wine: two products that have travelled and created economies along the same coast.

+Day 7 · Favignana | Salt and tuna

Transfer to the port and ferry to Favignana.

Visit to the former Florio Establishment of the Favignana and Formica tuna traps.

We will learn about fishing, tuna processing and the history of the island.

Lunch dedicated to seafood cuisine. When possible the programme may include an experience at sea or a meeting with those who live the world of fishing.

Return to the mainland.

+Day 8 · Mazara del Vallo | The Mediterranean at the table

Last day in Mazara del Vallo.

Kasbah, port and sea culture.

The last lunch will ideally bring together the whole route.

Salt will no longer be what we find in a salt shaker. It will be sea, wind, fishermen, tuna traps, preservation, cooking, wine and community.

End of services.
